We bring in tails from the same Bahamian waters as our stone crab claws and deliver them chilled on ice to homes, restaurants, and events throughout Central Florida. Tell us the size and quantity you need and we will quote it from the current catch.

In the Kitchen
Cut down the top of the shell with kitchen shears, gently lift the meat and rest it on top of the shell. It cooks evenly and looks the part on the plate.
Brush with butter, garlic, and a squeeze of lime. Broil or grill shell-side down for about 1 minute per ounce, until the meat is opaque and just firm.
Spiny lobster goes from perfect to rubbery quickly. Pull it at 140°F internal — it will finish with carryover heat while you plate.
Drawn butter is classic, but try it the island way: grilled with a little Old Bay, or chopped into a curry or lobster salad with fresh citrus.
